Horny Goat There are four main ingredients in any beer: water, malted barley, hops, and yeast. Each can have a tremendous effect on flavor, as follows: Malt: More than 50 different kinds, flavors including: grainy, bready, biscuit, sweet, caramel, raisin, maple, toasty, roasty, coffee, burnt (just to name a few). Malt provides fermentable sugars. Hops: Roughly 100 different kinds, adding bitterness and flavors including: floral, herbal, spicy, earthy (yes muddy), grassy, citrus (especially grapefruit), berry-like, piney, catty (as in litterbox!). Yeast: Hundreds and hundreds of different kinds, each with quirks. This is WAY too deep to get into here!! Yeasts can give off apple, clove, pepper, banana, bubblegum, pineapple, butter flavors, etc. Water: Yes, water can provide a lot of flavor, or none at all. If you've tasted a Heineken on draft or canned (not from a bottle), discover what minerally water does to a beer. Can add bitterness. Be aware of the differences in the two main types of beer, which are based on the species of yeast used and fermentation temperatures: Ale = Saccharomyces cerevisiae = warm fermentation (60 to 70 F) = generally more fruity and spicy flavors, more complex Lager = Saccharomyces pastorianus = cool fermentation (32 to 55 F) = cleaner malt flavors, not as fruity, can seem sweeter Both lagers and ales can be of ANY color, ANY alcoholic strength, etc. The difference is only in the yeast used, and the flavors given off by yeast (or lack thereof) as a result of fermentation. If someone asks for a "light beer", ask them if they want it light in color, light in flavor, or light in alcohol. It will make you sound very intellectual, and you might be surprised at the response. There are currently 80 different styles of beer recognized by the Beer Judge Certification Program (BJCP). Other organizations recognize as many as 100 or more distinct styles of beer. See www.bjcp.org/2008styles/catdex.php for further details on all the recognized styles, and much more.
